Eggs every morning for breakfast. tofu, legumes, grains, root vegetables. Fermented foods. Kim chi or kraut. I do alright. Kids love vegan breakfast sausage so we do that once a week or so. I'm a chef by trade so I may have had a leg up working in the PNW with its plethora of vegan and ethnic restaurants to draw inspiration from.
